After working in some of the best restaurants in the country and then being diagnosed with Celiac Disease, Chef Lila made it her mission to create French Pastry that is ‘taste-identical’ to its wheat flour counterparts. Creating high end pastry for hotels, Universities, for foodservice – and now directly to customers – Chef Lila is working to raise the bar on the perception of what gluten free should taste like.
